Ingredients
12 Slices of Deli Ham (280 g)
4 Eggs
8 Egg Whites
160 g Cottage cheese, 2% low fat
150 g Vegetables, low carbohydrate (eg broccoli, mushrooms, onions, peppers) rough chop
1/2 tsp Salt
1-2 tsp Herbs and Spices of your choice
Instructions
Preheat oven to 350°F.
Combine the eggs, egg whites, cottage cheese and spices, and blend until smooth.
Stir in the vegetables.
In a metal muffin tin, place one piece of ham in each muffin cup, folding slightly to roughly fit the shape of the cup.
Use a measuring cup to ladle the egg and vegetable mixture into each ham-lined cup.
Bake at 350°F for 45 minutes.
Eat hot or cold.
