Ham and Egg Muffin Cups

Ingredients

  • 12 Slices of Deli Ham (280 g)

  • 4 Eggs

  • 8 Egg Whites

  • 160 g Cottage cheese, 2% low fat

  • 150 g Vegetables, low carbohydrate (eg broccoli, mushrooms, onions, peppers) rough chop

  • 1/2 tsp Salt

  • 1-2 tsp Herbs and Spices of your choice

Instructions

  • Preheat oven to 350°F.

  • Combine the eggs, egg whites, cottage cheese and spices, and blend until smooth.

  • Stir in the vegetables.

  • In a metal muffin tin, place one piece of ham in each muffin cup, folding slightly to roughly fit the shape of the cup.

  • Use a measuring cup to ladle the egg and vegetable mixture into each ham-lined cup.

  • Bake at 350°F for 45 minutes.

  • Eat hot or cold.
